Clos-Vougeot is the archetype of a Burgundian Grand Cru. Acclaimed world-wide, these 50 walled hectares (124 acres) are the legacy of the Cistercian monks who planted the vines and built the chateau.
A property of the family for almost a century now, the parcel worked by Maison Dufouleur Frères is located in the place-name "Les Grands Maupertuis," in the higher - therefore better quality - area of the clos.
The vines, with an average of more than 40 years of age and replanted regularly, produce small concentrated grapes rich in polyphenols, resulting in a powerful yet refined wine.
Wine Making
Fermentation occurs over two to three weeks in temperature-controlled stainless steel vats, which measure the phenologic components extracted when pumping the skins over, and ensure the least possible pressure on the skins
Aging occurs from 18 to 22 months in oak barrels, with the proportion of new oak varying from 30% to 100% after the analysis, tasting, and evaluation of the characteristics of each vintage.
