AOC Gevrey-Chambertin - 100% Pinot-Noir
Gevrey-Chambertin is one of several villages in the Côte de Nuits that was given its name by a famous grand cru, in this case, Chambertin.
The vineyards are on brown calcic or limey soils and also reap the benefit of marls covered with screes and red silt washed down from the plateau. These stony mixtures confer elegance and delicacy on the wine while the clayey marls add body and firmness.
Wine Making
Fermentation occurs over two to three weeks in temperature-controlled stainless steel vats, which measure the phenologic components extracted when pumping the skins over, and ensure the least possible pressure on the skins
The aging occurs in oak barrels over 12 to 18 months, with the proportion of new oak varying from 30% to 100% depending upon an analysis, tasting, and evaluation of each vintage
Tasting notes
Massive, yet velvet-smooth, the tannins of Gevrey-Chambertin confer power and solidity to the build and contribute to its great longevity. This is a wine for meat-eaters : it goes superbly with rib steak, lamb and all musky solidly fibrous meats that need time in the mouth to extract all their savour.
