AOC Nuits-Saint-Georges 1er Cru - 100% Pinot-Noir
Positioned half-way between Dijon and Beaune, the village of Nuits-Saint-Georges inspired the name of the Côte de Nuits. This commune produces almost only red wines although there is a limited production of whites.
The soils are basically composed of limestone and marl. A perfect exposure to the East gives the capacity to produce splendid wines.
Les Chaboeufs it self is located on the south part of the appellation, in a little valley with more rocks than clay which give it this very delicate and almost mineral touch compared to the other more structured wines from Nuits-Saint-Georges.
Wine Making
Fermentation occurs over two to three weeks in temperature-controlled stainless steel vats, which measure the phenologic components extracted when pumping the skins over, and ensure the least possible pressure on the skins
Aging occurs from 18 to 22 months in oak barrels, with the proportion of new oak varying from 30% to 100% after the analysis, tasting, and evaluation of the characteristics of each vintage.
Tasting notes
2009: Good cherry red colour, nice elegance and lifted red fruits on the nose with an aromatic accent of rose petals, very good smoothness and depth in the palate. Gentle wine with lively acidity and lightly grippy tannins
